Hardcover books are always better when meant for display. Weisbard focuses in particular on formats―constructed mainstreams designed to appeal to distinct populations―showing how taste became intertwined with class, race, gender, and region. But warning this book ends in a not quite cliff hanger. The writing was often awkward, with many overly repeated phrases like the descriptor "rapid fire" every time Yael spoke in Hebrew. The plot seems to wind and turn and ramble without much making any real progress. It is quicker and easier to buy prepared burritos made with CAFO beef and agribusiness corn or wheat, and unfortunately cheaper in upfront money outlay, than to hunt down humane-certified beef and non-GMO grains and make the burritos from scratch in one's own kitchen.
